Irish Mist Brownies

Fudgy brownies layered with mint butter cream and drizzled with chocolate.



2 (1-ounce) squares unsweetened baking chocolate

1 cup sugar

3/4 cup all-purpose flour


2 cups powdered sugar

3 ounces cream cheese, softened

3 tablespoons Land O Lakes® Butter, softened

1/2 teaspoon peppermint extract

5 drops green food color

2 drops yellow food color

Step 1

Heat oven to 350°F. Line 8-inch square baking pan with aluminum foil, extending foil over edges. Grease foil; set aside.

Step 2

Melt 1/2 cup butter and 2 squares chocolate in 2-quart saucepan over medium heat, stirring constantly, 4-6 minutes or until smooth. Stir in all remaining brownie ingredients until well mixed. Spread into prepared pan.

Step 3

Bake 25-30 minutes or until brownie just begins to pull away from sides of pan. Cool completely.

Step 4

Combine all filling ingredients in bowl. Beat at medium speed until creamy. Spread over cooled bars. Drizzle with melted chocolate. Cool completely. Lift brownies out of pan using foil ends; cut into bars. Store, covered, in refrigerator.
