Hot Fudge Ice Cream Bar Dessert

This is an incredibly easy, rich, and satisfying ice cream dessert made with ice cream sandwiches and fudge sauce. This keeps in the freezer very well and can be eaten straight from the freezer.

Ingredients 

  • 1 (16 ounce) can chocolate syrup

  • ¾ cup peanut butter

  • 19  ice cream sandwiches

  • 1 (12 ounce) container frozen whipped topping, thawed

  • 1 cup salted peanuts


Directions

  1. Make the fudge mixture: Pour the chocolate syrup into a medium microwave-safe bowl and microwave until hot, about 2 minutes on high, stopping every 30 seconds. Stir every 30 seconds to prevent scorching, and watch closely to avoid boiling.

  2. Add peanut butter: Stir peanut butter into hot chocolate syrup until smooth. Let it cool to room temperature. Cooling helps the layers set better without melting the whipped topping.

  3. Layer the base: Line the bottom of a 9x13-inch dish with a layer of ice cream sandwiches. Cut or trim sandwiches to fit snugly in the corners and edges for a cleaner presentation.

  4. Add toppings: Spread half the whipped topping over the sandwiches. Spoon half the chocolate-peanut butter mixture on top. Sprinkle with half the peanuts.

  5. Repeat the layers: Add another layer of ice cream sandwiches, the remaining whipped topping, chocolate mixture, and peanuts.

  6. Freeze: Freeze until firm, at least 1 hour. For best results, freeze for 3–4 hours or overnight. This makes it easier to cut clean squares.

  7. Serve: Cut into squares and enjoy! For a neater cut, run your knife under hot water before slicing.


Optional Add-ins:

  • Use crunchy peanut butter for texture.

  • Add mini chocolate chips or crushed cookies between layers.

  • Drizzle caramel sauce over the top before freezing for extra decadence.
