1 (16.5-ounce) tube refrigerated sugar cookie dough (such as Pillsbury).
8 ounces cream cheese, softened.
1/3 cup unsifted powdered sugar.
3 cups fresh fruit, such as blueberries, blackberries, raspberries, sliced strawberries, sliced kiwi, or mandarin oranges.
1/4 cup orange marmalade, optional.
Directions
Preheat the oven to 350°F.
Spray a large baking sheet with nonstick cooking spray.
Pat the dough into the pan:
Break the cookie dough into pieces. Press the dough on the sheet into an 11-inch circle, about 1/8-inch thick. (Alternatively, you can use a 12-inch pizza pan, leaving a 1/2-inch border from the edge.) Press the dough evenly to ensure consistent baking.
Bake:
Bake the cookie crust until light golden brown on top with golden brown edges, about 12 minutes. The crust will seem soft, but will continue to set as it cools. Set the pan on a wire rack to cool completely, about 30 minutes.
Make the topping:
In a medium bowl, beat the cream cheese and sugar until smooth. Spread the cream cheese topping evenly over the cooled cookie crust, leaving a 3/4-inch border.
Top with fruit and serve or chill:
Arrange the fruit over the topping, overlapping as necessary. To make the optional glaze, microwave the marmalade in a small bowl on HIGH until thinned, about 30 seconds. Brush or spoon the glaze over the fruit. Serve immediately, or refrigerate, uncovered, for 1 hour before serving.
