Beat the summer heat with this magically effortless watermelon granita. Crisp, fluffy, and naturally sweet, it offers all the icy joy of a traditional summer granita without any of the tedious hourly stirring, delivering pure, frosty bliss straight in mere minutes.

Ingredients
Seedless watermelon, peeled and cut into cubes (frozen solid)
Optional Toppings & Variations
Tart: A squeeze of fresh lime juice (blended in)
Sweet: A drizzle of honey or sweetened condensed milk
Spicy: A sprinkle of Tajín mixed with granulated sugar
Adult Treat: A splash of prosecco or sparkling wine over the top
Instructions
Freeze the watermelon: Place cubed watermelon in a single layer on a sheet pan and freeze until solid. Transfer to a zip-top freezer bag for storage (keeps well for up to 1 month).
Load the processor: Fill a food processor at least halfway with frozen watermelon cubes so the blades can catch the fruit properly.
Pulse and scrape: Pulse several times to break up the large chunks, stopping to scrape down the sides of the bowl with a rubber spatula.
Blend: Process continuously until the watermelon transforms into a fluffy, pink, snow-like texture.
Serve: Spoon into chilled bowls and enjoy immediately, either plain or dressed up with your favorite toppings.
