These turkey burgers have their cheese tucked inside, ready to melt as they cook. Seal the patties carefully to help keep the filling in place, then serve on buns with lettuce, tomato, pickles, and your favorite condiments.

Makes 4 burgers.

Ingredients

  • 1 pound 93% lean ground turkey

  • 4 slices reduced-fat cheddar or American cheese, approximately 0.7 ounce each

  • 1 teaspoon kosher salt

  • Black pepper, to taste

  • 4 hamburger buns

  • 4 iceberg lettuce leaves

  • Sliced red onion, tomato, and pickles, for serving

  • Ketchup, mustard, or other condiments, optional

Directions

  1. Cut each cheese slice into quarters and stack the pieces together, making four small stacks.

  2. Divide the turkey into eight equal portions. Gently flatten each into a thin patty, approximately 1/4 inch thick.

  3. Put a cheese stack in the center of four patties. Cover each with another patty and press the edges together firmly, leaving no openings.

  4. Shape the burgers to an even thickness and season both sides with the salt and pepper.

  5. Heat the grill to medium and lightly oil the cooking grate.

  6. Grill with the lid closed for approximately 6 minutes per side. Continue cooking until the turkey reaches 165°F, checking the meat with a thermometer rather than the cheese filling.

  7. Let the burgers cool briefly before eating because the melted cheese will be hot.

  8. Assemble on buns with lettuce and your chosen toppings.
