Easy French Apple Cake

Updated: Oct 12
Have apples to use up? Fold them into a buttery cake with vanilla and a little rum. A dusting of powdered sugar is all it needs before slicing and serving.
Ingredients
1 cup (130 g) all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
2 large eggs, at room temperature
1 cup (200 g) granulated sugar
2 tablespoons rum
2 teaspoons vanilla extract
10 tablespoons (141 g) unsalted butter, melted and cooled to room temperature
5–6 medium apples (about 2 pounds), peeled, cored, and cut into 1/2-inch pieces
Confectioners' sugar for dusting, optional
Directions
Heat the oven to 350°F. Grease a 9-inch springform pan and put a circle of parchment paper in the bottom.
Combine the flour, baking powder, and salt in one bowl. In another, whisk the eggs with the granulated sugar, rum, and vanilla.
Mix half of the flour mixture into the egg mixture, followed by the cooled melted butter. Add the rest of the flour mixture, stopping while a few traces of flour remain.
Fold in the apple pieces until distributed through the batter. Transfer to the prepared pan and level the surface.
Bake for about 1 hour. The cake is ready when its surface is golden and a toothpick inserted into the center comes out clean.
Let the cake cool in its pan on a rack. Dust with confectioners' sugar if using, then serve.
